Cong You Ban Mian (Chinese Scallion Oil Noodles)

Scallions cooked slowly in oil until dark and brittle, then tossed through noodles with the oil and soy.

Ingredients

  • 350 g Chinese wheat noodles
  • 8 green onions, cut into 5 cm pieces
  • 80 ml neutral oil
  • 3 tbsp soy sauce
  • 1 tbsp sugar

Directions

  1. 1Put the green onions and the oil in a cold pan together and set it over low heat.
  2. 2Cook twenty minutes, moving them occasionally, until they shrink and turn dark brown and brittle.
  3. 3Lift the scallions out and keep them; the oil is now the sauce.
  4. 4Add the soy sauce and sugar to the warm oil and stir one minute until the sugar dissolves.
  5. 5Cook the noodles four minutes, drain them, and tip them straight into the pan.
  6. 6Toss until every strand is coated, then scatter the crisp scallions back over.

💡 Low heat and twenty minutes. Rushed scallions turn bitter, and the whole dish is only this oil and these noodles.
