Golden, crispy fritters bursting with sweet corn kernels and a hint of jalapeño heat.

Ingredients

  • 2 cups fresh or frozen corn kernels
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup whole milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño, minced (optional)
  • 2 tablespoons fresh cilantro, chopped
  • oil for frying vegetable or canola oil

Directions

  1. 1In a bowl, whisk together flour, baking powder, salt, and pepper.
  2. 2In another bowl, beat eggs with milk and stir in corn, jalapeño, and cilantro.
  3. 3Combine wet and dry ingredients until just mixed; do not overstir.
  4. 4Heat oil to 350°F in a skillet or deep pan.
  5. 5Drop spoonfuls of batter into hot oil and fry 2-3 minutes per side until golden brown.
  6. 6Transfer fritters to paper towels to drain excess oil.
  7. 7Serve warm with sour cream, lime crema, or salsa.
