Corn Fritters

Ingredients
- •2 cups fresh or frozen corn kernels
- •1 cup all-purpose flour
- •2 eggs
- •1/2 cup whole milk
- •1 teaspoon baking powder
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •1 jalapeño, minced (optional)
- •2 tablespoons fresh cilantro, chopped
- •oil for frying vegetable or canola oil
Directions
- 1In a bowl, whisk together flour, baking powder, salt, and pepper.
- 2In another bowl, beat eggs with milk and stir in corn, jalapeño, and cilantro.
- 3Combine wet and dry ingredients until just mixed; do not overstir.
- 4Heat oil to 350°F in a skillet or deep pan.
- 5Drop spoonfuls of batter into hot oil and fry 2-3 minutes per side until golden brown.
- 6Transfer fritters to paper towels to drain excess oil.
- 7Serve warm with sour cream, lime crema, or salsa.
