Corn Salsa

Ingredients

  • 3 cups fresh corn kernels (or frozen, thawed)
  • 1 medium red bell pepper, diced
  • 1/2 medium red onion, finely diced
  • 1 jalapeño, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. 1In a large bowl, combine the corn kernels, diced bell pepper, red onion, and jalapeño.
  2. 2Add the fresh cilantro to the mixture.
  3. 3In a small bowl, whisk together lime juice and olive oil.
  4. 4Pour the lime mixture over the corn and vegetables, then toss gently to combine.
  5. 5Season with salt and pepper to taste.
