Cornmeal Pancakes

Ingredients
- •1 cup cornmeal
- •1 cup all-purpose flour

- •1 3/4 cups milk

Directions
- 1In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- 2In another bowl, beat eggs and mix with milk and melted butter.
- 3Pour wet ingredients into dry ingredients and stir until just combined; batter should be slightly lumpy.
- 4Heat a griddle or skillet over medium-high heat and lightly butter it.
- 5Pour 1/4 cup batter for each pancake and cook for 2-3 minutes until edges look set and bubbles form on top.
- 6Flip and cook for another 1-2 minutes until golden brown on both sides.
- 7Serve warm with maple syrup, honey, or your favorite toppings.
