Corvina a la Sal
A whole fish encased in a salt crust that steams to perfection, emerging moist and delicately flavored with herbs.

Ingredients
- •1 whole corvina fish (2-3 lbs), cleaned and scaled
- •4 cups sea salt
- •2 cups all-purpose flour
- •1 cup water
- •3 egg whites
- •2 sprigs fresh rosemary
- •2 sprigs fresh thyme
- •1 lemon, sliced
- •2 tablespoons olive oil
- •to taste black pepper
Directions
- 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2Mix salt, flour, egg whites, and water until a thick, moldable paste forms.
- 3Stuff the cavity of the corvina with lemon slices, rosemary, and thyme sprigs.
- 4Spread half the salt mixture on the baking sheet and place the fish on top.
- 5Cover the fish completely with the remaining salt paste, sealing all edges.
- 6Bake for 35-40 minutes until the salt crust is golden and hardened.
- 7Remove from oven and let rest for 5 minutes, then crack and remove the salt crust.
- 8Carefully fillet the fish, drizzle with olive oil, and serve immediately with fresh lemon.
