Cottage Cheese Breakfast Pitas

- •2 whole wheat pitas (15 cm / 6-inch)
- •½ cup (125 mL) full-fat cottage cheese (2% or 4%)
- •2 large eggs
- •¼ cup (30 g) shredded mozzarella or marble cheese
- •¼ tsp garlic powder
- •¼ tsp dried Italian seasoning
- •¼ tsp salt
- •⅛ tsp black pepper
- •1 tsp olive oil or cooking spray
- •¼ cup cherry tomatoes, halved (for topping)
- •1 tbsp fresh chives or green onion, sliced (for topping)
- •pinch chili flakes (optional, for topping)
Directions
- 1Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2In a small bowl, stir together the cottage cheese, garlic powder, Italian seasoning, salt, and pepper until well combined.
- 3Place the pitas on the prepared baking sheet and lightly brush or spray the tops with olive oil.
- 4Spread half the cottage cheese mixture onto each pita, leaving a 1 cm border around the edge to form a rim that will cradle the egg.
- 5Use the back of a spoon to create a small well in the centre of each cottage cheese layer, then carefully crack one egg into each well.
- 6Sprinkle the shredded cheese evenly over each pita, avoiding the egg yolk so it stays visible and sets to your preferred doneness.
- 7Bake for 10–13 minutes, until the egg whites are fully set, the cottage cheese is puffed and lightly golden, and the pita edges are crisp. For a fully set yolk bake the full 13 minutes; for a runny yolk, check at 10.
- 8Remove from the oven, top with cherry tomatoes, chives, and chili flakes if using, and serve immediately.
💡 Can't find small pitas? Use naan bread or flatbread instead — just trim to size or let the edges go extra crispy. For a dairy-free swap, use a plant-based cottage cheese (Good Culture or Daiya work well at Canadian Walmart and Loblaws) and skip the shredded cheese or use a vegan mozzarella. Add everything bagel seasoning in place of the garlic powder and Italian seasoning for a popular flavour variation. Leftovers do not reheat well as the egg overcooks, so bake only what you plan to eat.
