Cottage Cheese Overnight Oats

Ingredients
- •1 cup large-flake rolled oats (not instant)
- •1 cup full-fat or 2% cottage cheese
- •½ cup milk (any kind)
- •2 tbsp chia seeds
- •2 tbsp pure maple syrup or honey
- •1 tsp pure vanilla extract
- •¾ cup fresh or frozen blueberries
- •⅛ tsp pinch of salt
Directions
- 1Add the cottage cheese, milk, maple syrup, vanilla extract, and salt to a blender or food processor. Blend on high for 30–45 seconds until completely smooth and creamy with no curds visible.
- 2In a large bowl or directly in two mason jars, combine the rolled oats and chia seeds.
- 3Pour the blended cottage cheese mixture over the oats and chia seeds. Stir well until everything is evenly coated.
- 4Fold in half the blueberries (about ⅓ cup), reserving the rest for topping.
- 5Divide the mixture evenly between two mason jars or airtight containers. Press down gently and smooth the tops.
- 6Seal the jars and refrigerate for at least 6 hours or overnight (up to 5 days).
- 7In the morning, stir the oats, loosen with a splash of milk if too thick, and top with the reserved fresh blueberries. Serve cold straight from the jar.
💡 Don't skip blending the cottage cheese — it's the key to a smooth, creamy texture with no grainy curds. If you don't have a blender, use a hand immersion blender or whisk the cottage cheese vigorously; the texture will be slightly chunkier but still delicious. Swap blueberries for any berry, diced mango, or sliced banana. For extra protein, stir in 1 scoop of unflavoured or vanilla whey protein powder with the oats. Steel-cut oats are not recommended as they won't soften enough overnight.
