Cottage Pie

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 2 pounds potatoes, peeled and cubed
  • 4 tablespoons butter
  • ½ cup milk
  • 1 cup cheddar cheese, shredded
  • to taste Salt and pepper

Directions

  1. 1Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter and milk until creamy.
  2. 2Heat olive oil in a large skillet over medium-high heat. Sauté onion, garlic, carrots, and celery for 5 minutes until softened.
  3. 3Add ground beef and cook until browned, breaking it apart as it cooks, about 5-7 minutes. Drain excess fat.
  4. 4Stir in tomato paste and cook for 1 minute. Pour in beef broth and simmer for 5 minutes. Season with salt and pepper.
  5. 5Transfer beef mixture to a baking dish. Spread mashed potatoes evenly over the top and sprinkle with cheese.
  6. 6Bake at 400°F (200°C) for 15-20 minutes until golden and bubbling around the edges. Let rest 5 minutes before serving.
