Couscous with Meat Sauce
Fluffy couscous topped with a rich, spiced meat and vegetable sauce that's savory and deeply satisfying.

Ingredients
- •2 cups couscous
- •1.5 lbs beef or lamb, cubed
- •2 medium onions, chopped
- •3 cloves garlic, minced
- •2 medium carrots, sliced
- •2 medium zucchini, cubed
- •1 can (14 oz) diced tomatoes
- •3 cups beef broth
- •2 teaspoons ground cumin
- •1 teaspoon paprika
- •2 tablespoons olive oil
- •to taste salt and pepper
Directions
- 1Heat olive oil in a large pot over medium-high heat and brown the meat on all sides, about 5 minutes. Remove and set aside.
- 2In the same pot, sauté onions and garlic until softened, about 3 minutes. Add carrots and zucchini, cooking for another 4 minutes.
- 3Stir in cumin and paprika, cooking for 1 minute until fragrant.
- 4Add the tomatoes and broth, then return the meat to the pot. Bring to a boil, then reduce heat and simmer for 25 minutes until meat is tender.
- 5While the sauce simmers, prepare couscous according to package directions using 3 cups of water or broth.
- 6Season the sauce with salt and pepper to taste.
- 7Fluff the couscous with a fork and transfer to a serving platter, then top with the meat and vegetable sauce.
