Couscous with Meat Sauce

Ingredients

  • 2 cups couscous
  • 1.5 lbs beef or lamb, cubed
  • 2 medium onions, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 medium zucchini, cubed
  • 1 can (14 oz) diced tomatoes
  • 3 cups beef broth
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • to taste salt and pepper

Directions

  1. 1Heat olive oil in a large pot over medium-high heat and brown the meat on all sides, about 5 minutes. Remove and set aside.
  2. 2In the same pot, sauté onions and garlic until softened, about 3 minutes. Add carrots and zucchini, cooking for another 4 minutes.
  3. 3Stir in cumin and paprika, cooking for 1 minute until fragrant.
  4. 4Add the tomatoes and broth, then return the meat to the pot. Bring to a boil, then reduce heat and simmer for 25 minutes until meat is tender.
  5. 5While the sauce simmers, prepare couscous according to package directions using 3 cups of water or broth.
  6. 6Season the sauce with salt and pepper to taste.
  7. 7Fluff the couscous with a fork and transfer to a serving platter, then top with the meat and vegetable sauce.
