Coxinha (Brazilian Chicken Croquettes)
Shredded chicken and cream cheese wrapped in a dough cooked in broth, shaped into teardrops and fried.

Ingredients
- •300 g chicken breast
- •500 ml chicken broth
- •250 g all-purpose flour
- •100 g cream cheese
- •1 small onion, finely chopped
- •2 tbsp parsley, chopped
- •1 egg
- •150 g breadcrumbs
- •500 ml neutral oil, for frying
Directions
- 1Poach the chicken in the broth for twenty minutes, then lift it out and shred it. Keep the broth.
- 2Mix the chicken with the onion, parsley and cream cheese and season well.
- 3Bring the broth back to a boil, tip in all the flour at once, and stir five minutes to a smooth stiff dough.
- 4Turn the dough out and cool twenty minutes until you can handle it.
- 5Flatten pieces of dough, fill each with chicken, and pinch closed into a teardrop.
- 6Roll through beaten egg then breadcrumbs, and fry at 170C for four minutes until deep golden.
💡 The dough is cooked in the poaching broth, not water. That is where a coxinha gets its savour, so do not throw it away.
