Ingredients

  • 300 g chicken breast
  • 500 ml chicken broth
  • 250 g all-purpose flour
  • 100 g cream cheese
  • 1 small onion, finely chopped
  • 2 tbsp parsley, chopped
  • 1 egg
  • 150 g breadcrumbs
  • 500 ml neutral oil, for frying

Directions

  1. 1Poach the chicken in the broth for twenty minutes, then lift it out and shred it. Keep the broth.
  2. 2Mix the chicken with the onion, parsley and cream cheese and season well.
  3. 3Bring the broth back to a boil, tip in all the flour at once, and stir five minutes to a smooth stiff dough.
  4. 4Turn the dough out and cool twenty minutes until you can handle it.
  5. 5Flatten pieces of dough, fill each with chicken, and pinch closed into a teardrop.
  6. 6Roll through beaten egg then breadcrumbs, and fry at 170C for four minutes until deep golden.

💡 The dough is cooked in the poaching broth, not water. That is where a coxinha gets its savour, so do not throw it away.
