Cranberry Scones

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter, cubed
  • 3/4 cup fresh or dried cranberries
  • 1 teaspoon orange zest
  • 3/4 cup heavy cream
  • 1 egg

Directions

  1. 1Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. 2Mix flour, sugar, baking powder, salt, and orange zest in a large bowl.
  3. 3Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs, then fold in cranberries.
  4. 4In a small bowl, whisk together cream and egg, then add to dry ingredients and stir until a soft dough forms.
  5. 5Turn dough onto a floured surface, gently knead 2-3 times, then pat into a 1-inch thick round and cut into 8 wedges.
  6. 6Place scones on baking sheet and bake for 12-15 minutes until golden brown.
  7. 7Cool on a wire rack for 5 minutes and serve warm with jam and clotted cream if desired.
