Cream of Asparagus Soup
A silky, elegant soup with tender asparagus and a rich cream base, perfect for a light lunch.

Ingredients
- •1 lb fresh asparagus, trimmed and chopped
- •2 tbsp butter
- •1 medium onion, diced
- •3 cloves garlic, minced
- •4 cups vegetable or chicken broth
- •1 cup heavy cream
- •1/2 tsp salt
- •1/4 tsp black pepper
- •1/4 tsp nutmeg
- •2 tbsp fresh lemon juice
Directions
- 1Melt butter in a large pot over medium heat and sauté diced onion and garlic until soft, about 3 minutes.
- 2Add chopped asparagus and broth, then bring to a boil and simmer for 12-15 minutes until asparagus is very tender.
- 3Remove from heat and blend the soup until smooth using an immersion blender or regular blender in batches.
- 4Stir in heavy cream, salt, pepper, and nutmeg, then gently reheat without boiling.
- 5Finish with fresh lemon juice and adjust seasonings to taste before serving.
