Cream of Asparagus Soup

A silky, elegant soup with tender asparagus and a rich cream base, perfect for a light lunch.

Ingredients

  • 1 lb fresh asparagus, trimmed and chopped
  • 2 tbsp butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 2 tbsp fresh lemon juice

Directions

  1. 1Melt butter in a large pot over medium heat and sauté diced onion and garlic until soft, about 3 minutes.
  2. 2Add chopped asparagus and broth, then bring to a boil and simmer for 12-15 minutes until asparagus is very tender.
  3. 3Remove from heat and blend the soup until smooth using an immersion blender or regular blender in batches.
  4. 4Stir in heavy cream, salt, pepper, and nutmeg, then gently reheat without boiling.
  5. 5Finish with fresh lemon juice and adjust seasonings to taste before serving.
