Ingredients

  • 4 tablespoons butter
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 4 cups fresh or frozen corn kernels
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Directions

  1. 1Melt butter in a large skillet over medium heat and sauté diced onion until softened, about 3 minutes.
  2. 2Add minced garlic and cook for 1 minute until fragrant.
  3. 3Stir in corn kernels and broth, then bring to a simmer and cook for 5 minutes.
  4. 4In a small bowl, whisk together cornstarch and 2 tablespoons of water to create a slurry.
  5. 5Pour in heavy cream and the cornstarch slurry, stirring constantly until the sauce thickens, about 2-3 minutes.
  6. 6Season with salt, pepper, and paprika, then simmer for 2 minutes more until flavors meld.
