Directions

- 2Melt butter in a large oven-safe skillet over medium-high heat until foaming.
- 3Sear chicken legs skin-side down for 6 minutes until deeply golden, then flip.
- 4Transfer skillet to 400°F oven and roast chicken legs for 22 minutes until cooked through.
- 5Remove chicken and set aside; pour off all but one tablespoon of drippings.
- 6Pour heavy cream into the same skillet over medium heat, scraping up browned bits.
- 7Stir in Parmesan and mixed vegetables; simmer 4 minutes until sauce thickens slightly.
- 8Return chicken to skillet, top with cashews, and serve immediately.
