Creamy Garlic Chicken Alfredo

Ingredients

  • 4 chicken legs, bone-in, skin-on
  • 1 cup heavy cream
  • 3 tablespoons butter
  • 1 teaspoon garlic powder
  • 1/2 cup Parmesan cheese, finely grated
  • 1 cup mixed vegetables, thawed if frozen
  • 1/4 cup cashews, roughly chopped
  • salt and black pepper seasoning, to taste

Directions

  1. 1Season chicken legs generously with salt, pepper, and garlic powder on all sides.
  2. 2Melt butter in a large oven-safe skillet over medium-high heat until foaming.
  3. 3Sear chicken legs skin-side down for 6 minutes until deeply golden, then flip.
  4. 4Transfer skillet to 400°F oven and roast chicken legs for 22 minutes until cooked through.
  5. 5Remove chicken and set aside; pour off all but one tablespoon of drippings.
  6. 6Pour heavy cream into the same skillet over medium heat, scraping up browned bits.
  7. 7Stir in Parmesan and mixed vegetables; simmer 4 minutes until sauce thickens slightly.
  8. 8Return chicken to skillet, top with cashews, and serve immediately.
