Creamy Salmon Bisque with Dill and Shallots

Ingredients
- •1 lb salmon fillet, cut into 1-inch chunks
- •3 shallots, finely minced
- •2 tbsp olive oil
- •2 cups mixed vegetables, chopped
- •3 tbsp Greek yogurt
- •1 cup heavy cream
- •2 tbsp dill, fresh or dried
- •1 tsp maple syrup
- •to taste Salt and pepper
Directions
- 1Heat olive oil in a large pot over medium heat until shimmering.
- 2Sauté shallots and mixed vegetables for 5 minutes until softened and fragrant.
- 3Add 3 cups water or broth, bring to a boil, then simmer 10 minutes.
- 4Carefully blend soup until smooth using an immersion blender.
- 5Stir in heavy cream, Greek yogurt, maple syrup, salt, and pepper.
- 6Gently add salmon chunks to simmering bisque; cook 8 minutes until opaque.
- 7Stir in dill and adjust seasoning to taste.
- 8Ladle into bowls and serve immediately.
