Creamy Salmon Bisque with Dill and Shallots

Ingredients

  • 1 lb salmon fillet, cut into 1-inch chunks
  • 3 shallots, finely minced
  • 2 tbsp olive oil
  • 2 cups mixed vegetables, chopped
  • 3 tbsp Greek yogurt
  • 1 cup heavy cream
  • 2 tbsp dill, fresh or dried
  • 1 tsp maple syrup
  • to taste Salt and pepper

Directions

  1. 1Heat olive oil in a large pot over medium heat until shimmering.
  2. 2Sauté shallots and mixed vegetables for 5 minutes until softened and fragrant.
  3. 3Add 3 cups water or broth, bring to a boil, then simmer 10 minutes.
  4. 4Carefully blend soup until smooth using an immersion blender.
  5. 5Stir in heavy cream, Greek yogurt, maple syrup, salt, and pepper.
  6. 6Gently add salmon chunks to simmering bisque; cook 8 minutes until opaque.
  7. 7Stir in dill and adjust seasoning to taste.
  8. 8Ladle into bowls and serve immediately.
