Crispy Phyllo Cups with Spinach and Feta

Ingredients

  • 6 sheets phyllo dough
  • 4 tablespoons butter, melted
  • 10 ounces frozen spinach, thawed and drained
  • 1 cup crumbled feta cheese
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried oregano

Directions

  1. 1Preheat oven to 375°F. Brush a 12-cup muffin tin with melted butter.
  2. 2Cut phyllo sheets into 4-inch squares. Layer 2-3 squares in each muffin cup, brushing lightly with butter between layers, letting edges stick up slightly.
  3. 3Bake phyllo cups for 8-10 minutes until golden and crispy. Remove and let cool slightly.
  4. 4In a bowl, combine thawed spinach, feta cheese, red onion, garlic, oregano, salt, and pepper.
  5. 5Spoon spinach mixture evenly into cooled phyllo cups.
  6. 6Bake filled cups for 8-10 minutes until heated through. Serve warm.
