Crispy Phyllo Cups with Spinach and Feta

Ingredients
- •6 sheets phyllo dough
- •4 tablespoons butter, melted
- •10 ounces frozen spinach, thawed and drained
- •1 cup crumbled feta cheese
- •1/4 cup diced red onion
- •2 cloves garlic, minced
- •1/4 teaspoon dried oregano

Directions
- 1Preheat oven to 375°F. Brush a 12-cup muffin tin with melted butter.
- 2Cut phyllo sheets into 4-inch squares. Layer 2-3 squares in each muffin cup, brushing lightly with butter between layers, letting edges stick up slightly.
- 3Bake phyllo cups for 8-10 minutes until golden and crispy. Remove and let cool slightly.
- 4In a bowl, combine thawed spinach, feta cheese, red onion, garlic, oregano, salt, and pepper.
- 5Spoon spinach mixture evenly into cooled phyllo cups.
- 6Bake filled cups for 8-10 minutes until heated through. Serve warm.
