Crispy Potato Skins

Golden, crispy potato shells loaded with melted cheese, bacon, and sour cream.

Ingredients

  • 4 large russet potatoes
  • 3 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons fresh chives, chopped
  • 1/2 cup sour cream

Directions

  1. 1Preheat oven to 400°F. Wash potatoes and bake for 20 minutes until partially cooked.
  2. 2Cool potatoes slightly, then cut each in half lengthwise and scoop out centers, leaving a thin shell.
  3. 3Brush potato skins with oil and season with salt and pepper.
  4. 4Place skins skin-side down on a baking sheet and bake for 10 minutes until crispy.
  5. 5Top each skin with bacon, cheese, and chives, then bake for 5 more minutes until cheese melts.
  6. 6Serve hot with sour cream on the side for dipping.
