Crispy Potato Skins
Golden, crispy potato shells loaded with melted cheese, bacon, and sour cream.

Ingredients
- •4 large russet potatoes
- •3 tablespoons vegetable oil
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •8 slices bacon, cooked and crumbled
- •1 1/2 cups shredded cheddar cheese
- •2 tablespoons fresh chives, chopped
- •1/2 cup sour cream
Directions
- 1Preheat oven to 400°F. Wash potatoes and bake for 20 minutes until partially cooked.
- 2Cool potatoes slightly, then cut each in half lengthwise and scoop out centers, leaving a thin shell.
- 3Brush potato skins with oil and season with salt and pepper.
- 4Place skins skin-side down on a baking sheet and bake for 10 minutes until crispy.
- 5Top each skin with bacon, cheese, and chives, then bake for 5 more minutes until cheese melts.
- 6Serve hot with sour cream on the side for dipping.
