Ingredients

  • 3 cups rice, cooked and chilled
  • 1 lb salmon, cut into cubes
  • 2 tbsp vegetable oil
  • 1 cucumber, sliced
  • 1 avocado, diced
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 2 green onions, sliced

Directions

  1. 1Press chilled rice into an oiled skillet and cook 8 minutes until the bottom is crisp.
  2. 2Flip rice in sections and crisp the second side.
  3. 3Cook salmon cubes in a separate skillet 2 to 3 minutes per side.
  4. 4Mix soy sauce, lime juice, and sesame oil.
  5. 5Divide crispy rice among bowls; add salmon, cucumber, and avocado.
  6. 6Drizzle with dressing and top with green onions.
