Crispy Rice Salmon Bowls

Ingredients
- •3 cups rice, cooked and chilled
- •1 lb salmon, cut into cubes

Directions
- 1Press chilled rice into an oiled skillet and cook 8 minutes until the bottom is crisp.
- 2Flip rice in sections and crisp the second side.
- 3Cook salmon cubes in a separate skillet 2 to 3 minutes per side.
- 4Mix soy sauce, lime juice, and sesame oil.
- 5Divide crispy rice among bowls; add salmon, cucumber, and avocado.
- 6Drizzle with dressing and top with green onions.
