Ingredients

  • 4 medium russet potatoes
  • 2 quarts vegetable oil for frying
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Directions

  1. 1Peel potatoes and slice them into 1/8-inch thick slices using a mandoline or sharp knife.
  2. 2Layer potato slices and rotate 45 degrees, then slice again to create waffle pattern pieces.
  3. 3Soak potato pieces in cold water for 15 minutes to remove excess starch, then pat dry with paper towels.
  4. 4Heat oil to 350°F in a deep pot or deep fryer.
  5. 5Fry potato waffle pieces in batches for 4-5 minutes until golden and crispy, working in small portions.
  6. 6Remove fries with a slotted spoon and drain on paper towels.
  7. 7Season immediately with salt, pepper, garlic powder, and paprika while still hot.
