Croquetas de Jamón (Cuban Ham Croquettes)

Cuban ham croquettes made from a thick béchamel and finely chopped ham, breaded and fried until crisp.

Ingredients

  • 2 cups cooked ham, finely chopped
  • 4 tbsp unsalted butter
  • 1/2 cup all-purpose flour
  • 2 cups whole milk
  • 1/3 cup yellow onion, finely minced
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • 2 cups breadcrumbs
  • 4 cups vegetable oil for frying

Directions

  1. 1Melt butter and cook onion for 3 minutes, then stir in flour for 1 minute.
  2. 2Whisk in milk gradually and cook until the béchamel becomes very thick, about 5 minutes.
  3. 3Stir in ham, nutmeg, salt, and black pepper, then cool the mixture for 60 minutes.
  4. 4Shape the chilled mixture into small cylinders.
  5. 5Dip each croquette in beaten egg, coat with breadcrumbs, and chill for 15 minutes.
  6. 6Fry at 350°F (175°C) for 2–3 minutes until crisp and golden.

💡 The filling must be completely cold before shaping; warm béchamel sticks to your hands and leaks through the breading.
