Croquetas de Jamón (Cuban Ham Croquettes)
Cuban ham croquettes made from a thick béchamel and finely chopped ham, breaded and fried until crisp.

Ingredients
- •2 cups cooked ham, finely chopped
- •4 tbsp unsalted butter
- •1/2 cup all-purpose flour
- •2 cups whole milk
- •1/3 cup yellow onion, finely minced
- •1/4 tsp ground nutmeg
- •1/2 tsp salt
- •1/4 tsp black pepper
- •2 eggs, beaten
- •2 cups breadcrumbs
- •4 cups vegetable oil for frying
Directions
- 1Melt butter and cook onion for 3 minutes, then stir in flour for 1 minute.
- 2Whisk in milk gradually and cook until the béchamel becomes very thick, about 5 minutes.
- 3Stir in ham, nutmeg, salt, and black pepper, then cool the mixture for 60 minutes.
- 4Shape the chilled mixture into small cylinders.
- 5Dip each croquette in beaten egg, coat with breadcrumbs, and chill for 15 minutes.
- 6Fry at 350°F (175°C) for 2–3 minutes until crisp and golden.
💡 The filling must be completely cold before shaping; warm béchamel sticks to your hands and leaks through the breading.
