Ingredients

  • 8 slices white bread, crusts removed
  • 4 oz cream cheese, softened
  • 1 medium English cucumber
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon butter, softened

Directions

  1. 1Mix softened cream cheese with lemon juice, dill, salt, and pepper in a small bowl.
  2. 2Thinly slice the cucumber lengthwise into long ribbons using a mandoline or vegetable peeler.
  3. 3Spread cream cheese mixture evenly on one side of each bread slice.
  4. 4Arrange cucumber slices on half the bread slices, then top with remaining bread slices, cream cheese side down.
  5. 5Cut sandwiches diagonally into triangles and serve immediately.
