Cucumber and Yogurt Raita

A cool, creamy Indian yogurt side dish with fresh cucumbers, aromatic spices, and a hint of tanginess that perfectly complements any curry.

Ingredients

  • 2 cups plain yogurt
  • 1 medium cucumber, grated and drained
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon black salt
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon ground cumin
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 green chili, minced
  • Salt to taste salt

Directions

  1. 1In a bowl, whisk the yogurt until smooth and creamy.
  2. 2Add the grated and drained cucumber to the yogurt and mix well.
  3. 3Heat a small pan over medium heat and toast the cumin seeds until fragrant, about 1 minute, then grind lightly.
  4. 4Stir in the toasted cumin seeds, ground cumin, black salt, red chili powder, green chili, and fresh cilantro into the yogurt mixture.
  5. 5Taste and adjust salt and spices as needed.
  6. 6Chill in the refrigerator for at least 30 minutes before serving, or serve immediately at room temperature.
