Cucumber and Yogurt Raita
A cool, creamy Indian yogurt side dish with fresh cucumbers, aromatic spices, and a hint of tanginess that perfectly complements any curry.

Ingredients
- •2 cups plain yogurt
- •1 medium cucumber, grated and drained
- •1/2 teaspoon cumin seeds
- •1/4 teaspoon black salt
- •1/4 teaspoon red chili powder
- •1/4 teaspoon ground cumin
- •2 tablespoons fresh cilantro, chopped
- •1/2 green chili, minced
- •Salt to taste salt
Directions
- 1In a bowl, whisk the yogurt until smooth and creamy.
- 2Add the grated and drained cucumber to the yogurt and mix well.
- 3Heat a small pan over medium heat and toast the cumin seeds until fragrant, about 1 minute, then grind lightly.
- 4Stir in the toasted cumin seeds, ground cumin, black salt, red chili powder, green chili, and fresh cilantro into the yogurt mixture.
- 5Taste and adjust salt and spices as needed.
- 6Chill in the refrigerator for at least 30 minutes before serving, or serve immediately at room temperature.
