Ingredients

  • 180 g all-purpose flour
  • 200 g shrimp, chopped
  • 100 g bean sprouts
  • 2 green onions, sliced
  • 1 thai chilies, sliced
  • 220 ml water
  • 500 ml neutral oil, for frying

Directions

  1. 1Whisk the flour, water and a good pinch of salt into a batter the thickness of pouring cream.
  2. 2Fold in the chopped shrimp, bean sprouts, green onions and sliced thai chilies.
  3. 3Heat the oil to 170C.
  4. 4Slide in spoonfuls, letting each one spread rather than holding it in a ball.
  5. 5Fry four minutes, turning once, until the edges are lacy and deep gold.
  6. 6Drain on a rack and serve hot with chili sauce.

💡 A loose batter is what gives the ragged crisp edge. A thick one sets into a smooth ball and steams the prawns.
