Cucur Udang (Malaysian Prawn Fritters)
Chopped prawns and bean sprouts in a loose batter, fried into ragged fritters with crisp edges.

Ingredients
- •180 g all-purpose flour
- •200 g shrimp, chopped
- •100 g bean sprouts
- •2 green onions, sliced
- •1 thai chilies, sliced
- •220 ml water
- •500 ml neutral oil, for frying
Directions
- 1Whisk the flour, water and a good pinch of salt into a batter the thickness of pouring cream.
- 2Fold in the chopped shrimp, bean sprouts, green onions and sliced thai chilies.
- 3Heat the oil to 170C.
- 4Slide in spoonfuls, letting each one spread rather than holding it in a ball.
- 5Fry four minutes, turning once, until the edges are lacy and deep gold.
- 6Drain on a rack and serve hot with chili sauce.
💡 A loose batter is what gives the ragged crisp edge. A thick one sets into a smooth ball and steams the prawns.
