Curd Rice
A cooling, tangy South Indian comfort dish of rice mixed with yogurt and tempered with mustard seeds and curry leaves.

Ingredients
- •2 cups cooked rice, cooled
- •1 cup plain yogurt
- •2 tablespoons ghee or oil
- •1 teaspoon mustard seeds
- •1 teaspoon cumin seeds
- •2-3 dried red chilies
- •8-10 curry leaves
- •1/4 cup roasted peanuts
- •1/4 teaspoon turmeric powder
- •1/4 teaspoon salt, or to taste
- •1/4 cup cucumber, diced
- •2 tablespoons fresh coriander, chopped
Directions
- 1In a large bowl, combine cooled rice with yogurt, turmeric powder, and salt. Mix gently until well combined.
- 2Heat ghee in a small pan over medium heat. Add mustard seeds and let them splutter.
- 3Add cumin seeds, dried red chilies, and curry leaves to the pan. Fry for 30 seconds until fragrant.
- 4Pour the tempering into the rice mixture and stir well to distribute evenly.
- 5Fold in the roasted peanuts, diced cucumber, and fresh coriander.
- 6Taste and adjust salt if needed. Serve chilled or at room temperature.
