Curtido (Salvadoran Cabbage Slaw)

Ingredients
- •6 cups green cabbage, finely shredded
- •1 large carrot, grated
- •1/2 medium white onion, thinly sliced
- •1 tsp dried oregano
- •3/4 cup white vinegar
- •1/2 cup warm water
- •1 jalapeño, thinly sliced
- •1 tsp salt
Directions
- 1Combine cabbage, carrot, onion, oregano, jalapeño, and salt in a large bowl.
- 2Pour the warm water over the vegetables and toss for 30 seconds to soften them slightly.
- 3Drain off any excess water from the bowl.
- 4Add white vinegar and toss thoroughly so every strand is coated.
- 5Cover and let the curtido rest for 45 minutes at room temperature.
- 6Toss again and serve, or refrigerate for a sharper flavour.
💡 Do not fully cook the cabbage with hot water; curtido should soften slightly while keeping enough crunch to contrast with rich foods.
