Ingredients

  • 6 cups green cabbage, finely shredded
  • 1 large carrot, grated
  • 1/2 medium white onion, thinly sliced
  • 1 tsp dried oregano
  • 3/4 cup white vinegar
  • 1/2 cup warm water
  • 1 jalapeño, thinly sliced
  • 1 tsp salt

Directions

  1. 1Combine cabbage, carrot, onion, oregano, jalapeño, and salt in a large bowl.
  2. 2Pour the warm water over the vegetables and toss for 30 seconds to soften them slightly.
  3. 3Drain off any excess water from the bowl.
  4. 4Add white vinegar and toss thoroughly so every strand is coated.
  5. 5Cover and let the curtido rest for 45 minutes at room temperature.
  6. 6Toss again and serve, or refrigerate for a sharper flavour.

💡 Do not fully cook the cabbage with hot water; curtido should soften slightly while keeping enough crunch to contrast with rich foods.
