Cuscuz Nordestino (Brazilian Steamed Cornmeal Breakfast)
Northeastern Brazilian breakfast made from hydrated flaked cornmeal steamed until tender and fluffy, then finished simply with butter.

Ingredients
- •2 cups Brazilian flaked cornmeal (flocão de milho)
- •1 cup water
- •3/4 tsp salt
- •2 tbsp unsalted butter
Directions
- 1Combine flaked cornmeal and salt in a bowl, sprinkle with water, and mix until evenly damp but not wet.
- 2Rest the hydrated cornmeal for 10 minutes so the flakes absorb the water.
- 3Loosen the grains with your fingers and spoon them into a cuscuzeira or fine steamer basket without packing.
- 4Steam over simmering water for 10–12 minutes until the cornmeal is tender and holds together lightly.
- 5Turn the steamed cuscuz onto a plate and fluff it gently with a fork.
- 6Dot with butter while hot and serve immediately as a savoury breakfast.
💡 Use flocão or another coarse Brazilian flaked cornmeal, not semolina; the hydration-and-steaming method defines this dish.
