Custard Tart
A classic Portuguese pastry with a crispy puff pastry shell filled with creamy, caramelized custard.

Ingredients
- •320g puff pastry sheets
- •500ml whole milk
- •1 cinnamon stick
- •1 vanilla pod
- •5 egg yolks
- •100g granulated sugar
- •40g cornstarch
- •pinch salt
- •2 tablespoons butter
- •1 teaspoon ground cinnamon
Directions
- 1Preheat oven to 200°C (400°F). Line a muffin tin with puff pastry circles, prick with a fork, and bake for 15 minutes until light golden.
- 2Heat milk with cinnamon stick and vanilla pod until steaming, then remove from heat and let infuse for 10 minutes.
- 3Whisk egg yolks with sugar until pale, then add cornstarch and salt, whisking until smooth.
- 4Slowly pour hot milk into egg mixture while whisking constantly to temper the eggs.
- 5Strain custard through a fine sieve, stir in butter, and pour into pre-baked pastry shells.
- 6Bake for 15-20 minutes until custard is set but slightly jiggly in the center and tops are caramelized.
- 7Cool for 5 minutes, dust with ground cinnamon, and serve warm or at room temperature.
