Ingredients

  • 250 g all-purpose flour
  • 1 tsp berbere spice blend
  • 1/2 tsp salt
  • 2 tbsp neutral oil
  • 120 ml water

Directions

  1. 1Mix the flour, berbere, salt and oil, then add the water gradually to a stiff dough.
  2. 2Knead five minutes until smooth, then rest fifteen minutes under a cloth.
  3. 3Roll pieces of dough into long ropes about as thick as a pencil.
  4. 4Cut the ropes into pieces the size of a fingernail and spread them on a lined tray.
  5. 5Bake at 180C for thirty minutes, stirring twice, until hard and evenly browned.
  6. 6They will still give slightly when hot and harden as they sit.

💡 Cut them small and even. Anything much bigger stays soft in the middle however long you leave it in.
