Dabo Kolo (Ethiopian Spiced Crunchy Snacks)
Small nuggets of berbere-spiced dough baked hard, eaten by the handful with coffee.

Ingredients
- •250 g all-purpose flour
- •1 tsp berbere spice blend
- •1/2 tsp salt
- •2 tbsp neutral oil
- •120 ml water
Directions
- 1Mix the flour, berbere, salt and oil, then add the water gradually to a stiff dough.
- 2Knead five minutes until smooth, then rest fifteen minutes under a cloth.
- 3Roll pieces of dough into long ropes about as thick as a pencil.
- 4Cut the ropes into pieces the size of a fingernail and spread them on a lined tray.
- 5Bake at 180C for thirty minutes, stirring twice, until hard and evenly browned.
- 6They will still give slightly when hot and harden as they sit.
💡 Cut them small and even. Anything much bigger stays soft in the middle however long you leave it in.
