Dak Gomtang (Korean Chicken Soup)
A whole chicken simmered to a clean pale broth, shredded back in and seasoned at the table.

Ingredients
- •1.2 kg whole chicken
- •2 litres water
- •6 garlic cloves
- •1 small onion, halved
- •4 green onions, sliced
- •1 tsp salt
Directions
- 1Rinse the chicken and put it in a deep pot with the water, garlic and halved onion.
- 2Bring to a boil and skim the grey foam off carefully until the surface runs clear.
- 3Lower to a bare simmer and cook sixty minutes, skimming once or twice more.
- 4Lift the chicken out, let it cool enough to handle, and pull the meat from the bones in strips.
- 5Return the meat to the broth and season with the salt.
- 6Ladle into bowls and top generously with sliced green onion.
💡 Skim properly in the first ten minutes and keep it below a rolling boil. That is the whole difference between pale and cloudy.
