Dak Gomtang (Korean Chicken Soup)

A whole chicken simmered to a clean pale broth, shredded back in and seasoned at the table.

Ingredients

  • 1.2 kg whole chicken
  • 2 litres water
  • 6 garlic cloves
  • 1 small onion, halved
  • 4 green onions, sliced
  • 1 tsp salt

Directions

  1. 1Rinse the chicken and put it in a deep pot with the water, garlic and halved onion.
  2. 2Bring to a boil and skim the grey foam off carefully until the surface runs clear.
  3. 3Lower to a bare simmer and cook sixty minutes, skimming once or twice more.
  4. 4Lift the chicken out, let it cool enough to handle, and pull the meat from the bones in strips.
  5. 5Return the meat to the broth and season with the salt.
  6. 6Ladle into bowls and top generously with sliced green onion.

💡 Skim properly in the first ten minutes and keep it below a rolling boil. That is the whole difference between pale and cloudy.
