Dal Puri

Fluffy fried bread served with spiced lentil curry, a beloved Indian comfort meal.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 cup yellow split peas (dal)
  • 3 cups water
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 2 tablespoons oil for deep frying

Directions

  1. 1Rinse dal and cook in 3 cups water with turmeric until soft, about 25 minutes.
  2. 2Mix all-purpose flour, whole wheat flour, salt, and 2 tablespoons oil with water to form a soft dough, let rest 20 minutes.
  3. 3Heat 2 tablespoons oil in a pan, add cumin seeds, then onions and garlic, sauté until golden.
  4. 4Add cooked dal to the pan with chili powder and salt, simmer for 5 minutes to combine flavors.
  5. 5Divide dough into 8 balls and roll each into a thin circle.
  6. 6Heat oil for frying in a deep pan until hot, fry each puri until puffed and golden on both sides.
  7. 7Serve hot puris alongside the spiced dal curry.
