Dan Bing (Taiwanese Egg Crepe)
Taiwanese breakfast crepes with scallion and egg rolled into tender layers, sliced and served with a savoury soy-based dipping sauce.

Ingredients
- •1 cup all-purpose flour
- •2 tbsp cornstarch
- •1 1/4 cups water
- •4 eggs
- •4 green onions, thinly sliced
- •2 tbsp vegetable oil
- •2 tbsp soy sauce
- •1 tbsp rice vinegar
- •1 tsp sesame oil
- •1 tsp granulated sugar
Directions
- 1Whisk flour, cornstarch, and water into a thin smooth batter and stir in half the green onions.
- 2Heat a lightly oiled non-stick skillet over medium heat and pour in enough batter for a thin crepe.
- 3Cook 1–2 minutes, flip, and slide the crepe onto a plate while you repeat with the remaining batter.
- 4Beat one egg with a spoonful of remaining green onion and pour it into the skillet.
- 5Lay one crepe over the still-soft egg, cook until joined, then roll tightly and slice crosswise.
- 6Stir soy sauce, rice vinegar, sesame oil, and sugar together and serve alongside the sliced rolls.
💡 Keep the batter thinner than pancake batter; dan bing should be flexible enough to roll without cracking.
