Dan Dan Noodles

Spicy Sichuan noodles tossed in a rich sesame-peanut sauce with ground pork and crispy garnishes.

Ingredients

  • 8 oz fresh or dried wheat noodles
  • 6 oz ground pork
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tsp chili oil
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp Sichuan peppercorns, ground
  • 2 tbsp vegetable oil
  • 2 scallions, chopped
  • 2 tbsp crushed roasted peanuts

Directions

  1. 1Cook noodles according to package directions, drain and set aside.
  2. 2Heat vegetable oil in a wok or large pan over high heat, add minced garlic and cook for 30 seconds until fragrant.
  3. 3Add ground pork and stir-fry until cooked through, breaking it into small pieces, about 5-7 minutes.
  4. 4In a bowl, whisk together peanut butter, soy sauce, sesame oil, chili oil, rice vinegar, and ground Sichuan peppercorns until smooth.
  5. 5Add the sauce to the cooked pork and stir well to combine.
  6. 6Divide cooked noodles between bowls and pour the pork-sauce mixture over the top.
  7. 7Garnish with chopped scallions and crushed peanuts, then serve immediately.
