Dan Dan Noodles
Spicy Sichuan noodles tossed in a rich sesame-peanut sauce with ground pork and crispy garnishes.

Ingredients
- •8 oz fresh or dried wheat noodles
- •6 oz ground pork
- •3 tbsp peanut butter
- •2 tbsp soy sauce
- •1 tbsp sesame oil
- •2 tsp chili oil
- •1 tbsp rice vinegar
- •2 cloves garlic, minced
- •1 tsp Sichuan peppercorns, ground
- •2 tbsp vegetable oil
- •2 scallions, chopped
- •2 tbsp crushed roasted peanuts
Directions
- 1Cook noodles according to package directions, drain and set aside.
- 2Heat vegetable oil in a wok or large pan over high heat, add minced garlic and cook for 30 seconds until fragrant.
- 3Add ground pork and stir-fry until cooked through, breaking it into small pieces, about 5-7 minutes.
- 4In a bowl, whisk together peanut butter, soy sauce, sesame oil, chili oil, rice vinegar, and ground Sichuan peppercorns until smooth.
- 5Add the sauce to the cooked pork and stir well to combine.
- 6Divide cooked noodles between bowls and pour the pork-sauce mixture over the top.
- 7Garnish with chopped scallions and crushed peanuts, then serve immediately.
