Danish Pastry

Ingredients
- •2 1/4 cups all-purpose flour
- •1 cup cold butter, cubed
- •1/2 cup whole milk
- •1 tablespoon sugar
- •1/2 teaspoon salt
- •1 teaspoon instant yeast
- •1 egg yolk
- •1/2 cup almond paste or jam filling
- •1 cup powdered sugar
- •2 tablespoons milk for glaze
Directions
- 1Warm milk with sugar and salt, then stir in yeast and let sit 5 minutes; whisk in egg yolk.
- 2Mix flour in a bowl, make a well, add yeast mixture and stir until shaggy dough forms.
- 3Knead dough for 5 minutes, then wrap and refrigerate 30 minutes; laminate by folding in cold butter cubes in layers, chilling between folds for 30 minutes each (repeat 3 times).
- 4Roll final dough to 1/4-inch thickness, cut into 4-inch squares, place 1 tablespoon filling in center, fold corners to create envelope shape, and place on parchment paper.
- 5Cover pastries and let rise at room temperature for 45-60 minutes until puffy.
- 6Bake at 375°F for 15-18 minutes until golden brown.
- 7Whisk powdered sugar with milk to make glaze and drizzle over warm pastries before serving.
