Date Bars
Chewy date-filled bars with a buttery oat crust and crumbly topping.

Ingredients
- •2 cups pitted dates
- •3/4 cup water
- •1 cup all-purpose flour
- •1 cup rolled oats
- •3/4 cup butter, softened
- •3/4 cup brown sugar
- •1/2 teaspoon baking soda
- •1/4 teaspoon salt
- •1 tablespoon vanilla extract
Directions
- 1Preheat oven to 350°F (175°C). In a saucepan, combine dates and water, bring to a boil, then simmer for 5 minutes until softened. Mash into a paste and let cool.
- 2In a bowl, mix flour, oats, baking soda, and salt.
- 3Cream butter and brown sugar together, then stir in vanilla extract. Mix in the flour-oat mixture until crumbly.
- 4Press half of the oat mixture into a greased 9x13 inch baking pan.
- 5Spread the date paste evenly over the base layer.
- 6Top with remaining oat mixture and press gently.
- 7Bake for 25-30 minutes until golden brown.
- 8Cool completely before cutting into 16 bars.
