Ingredients

  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 1/4 cup heavy cream

Directions

  1. 1Preheat oven to 350°F. Grease a 9x13 inch baking pan. Pour boiling water over chopped dates and let sit for 10 minutes until softened.
  2. 2Cream together softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract.
  3. 3In a separate bowl, whisk together flour, baking soda, and salt. Alternately add dry ingredients and date mixture to the butter mixture, stirring until just combined.
  4. 4Pour batter into prepared pan and bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
  5. 5While cake cools slightly, prepare caramel: melt butter in a saucepan, stir in brown sugar and cream, and simmer for 2 minutes. Pour warm caramel over hot cake.
