Date Cake

Ingredients
- •1 cup pitted dates, chopped
- •1 cup boiling water
- •1/2 cup butter, softened
- •1 cup granulated sugar
- •2 large eggs
- •1 3/4 cups all-purpose flour
- •1 teaspoon vanilla extract
- •1 teaspoon baking soda
- •1/2 teaspoon salt
- •1/2 cup butter
- •3/4 cup brown sugar
- •1/4 cup heavy cream
Directions
- 1Preheat oven to 350°F. Grease a 9x13 inch baking pan. Pour boiling water over chopped dates and let sit for 10 minutes until softened.
- 2Cream together softened butter and granulated sugar until light and fluffy. Beat in eggs one at a time, then add vanilla extract.
- 3In a separate bowl, whisk together flour, baking soda, and salt. Alternately add dry ingredients and date mixture to the butter mixture, stirring until just combined.
- 4Pour batter into prepared pan and bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
- 5While cake cools slightly, prepare caramel: melt butter in a saucepan, stir in brown sugar and cream, and simmer for 2 minutes. Pour warm caramel over hot cake.
