Ingredients

  • 1 cup chopped dates
  • 1 cup boiling water
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla extract

Directions

  1. 1Preheat oven to 350°F and grease a 9x5 inch loaf pan.
  2. 2Pour boiling water over chopped dates and let sit for 10 minutes until softened.
  3. 3Cream together butter and sugar until light and fluffy, then beat in egg and vanilla extract.
  4. 4In a separate bowl, whisk together flour, baking soda, and salt.
  5. 5Fold the date mixture (with water) and dry ingredients alternately into the butter mixture, then stir in walnuts.
  6. 6Pour batter into prepared pan and bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
  7. 7Cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.
