Date Nut Bread

Ingredients
- •1 cup chopped dates
- •1 cup boiling water
- •1/2 cup butter, softened
- •1 cup granulated sugar
- •1 large egg
- •1 3/4 cups all-purpose flour
- •1 teaspoon baking soda
- •1/2 teaspoon salt
- •1 cup chopped walnuts
- •1 teaspoon vanilla extract
Directions
- 1Preheat oven to 350°F and grease a 9x5 inch loaf pan.
- 2Pour boiling water over chopped dates and let sit for 10 minutes until softened.
- 3Cream together butter and sugar until light and fluffy, then beat in egg and vanilla extract.
- 4In a separate bowl, whisk together flour, baking soda, and salt.
- 5Fold the date mixture (with water) and dry ingredients alternately into the butter mixture, then stir in walnuts.
- 6Pour batter into prepared pan and bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
- 7Cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.
