Denver Omelet

A fluffy, savory omelet loaded with ham, peppers, onions, and melted cheese.

Ingredients

  • 3 large eggs
  • 2 tablespoons butter
  • 1/4 cup diced ham
  • 1/4 cup diced bell pepper
  • 2 tablespoons diced onion
  • 1/4 cup shredded cheddar cheese
  • 1 pinch salt
  • 1 pinch black pepper

Directions

  1. 1Beat the eggs in a bowl with salt and pepper until well combined.
  2. 2Melt 1 tablespoon of butter in an 8-inch nonstick skillet over medium heat and sauté the bell pepper and onion for 2-3 minutes until softened. Add the ham and cook for 1 minute, then transfer to a plate.
  3. 3Add the remaining butter to the skillet and pour in the beaten eggs, tilting the pan to distribute evenly.
  4. 4Once the eggs start to set at the edges (about 1-2 minutes), gently push the cooked portions toward the center, allowing uncooked egg to flow to the edges.
  5. 5When the top is still slightly wet but the bottom is cooked, add the cooked vegetables, ham, and cheese to one half of the omelet.
  6. 6Fold the omelet in half and slide onto a plate. Serve immediately.
