Deruny (Ukrainian Potato Pancakes)

- •2 eggs
- •3 tbsp all-purpose flour
- •1 tsp salt
- •¼ tsp black pepper
- •4 tbsp sunflower or canola oil, for frying
- •½ cup sour cream, for serving
- •2 tbsp fresh chives or parsley, chopped
Directions
- 1Grate potatoes and onion on the large holes of a box grater into a bowl.
- 2Squeeze the mixture firmly in a clean kitchen towel to remove as much liquid as possible — this is key for crispiness.
- 3Stir in eggs, flour, salt, and pepper until combined.
- 4Heat 2 tbsp oil in a large non-stick skillet over medium-high heat.
- 5Drop heaping spoonfuls of batter into the pan and press gently into rounds; cook 3–4 minutes per side until deep golden brown.
- 6Work in batches, adding more oil as needed, and keep finished pancakes in a 200 °F oven on a rack while you cook the rest.
- 7Serve immediately topped with sour cream and fresh chives.
💡 Russet potatoes give the crispiest result. If the batter darkens as it sits, don't worry — that's natural oxidation and won't affect taste. Serve right away; deruny lose their crunch if they sit too long.
