Dhokla (Steamed Savoury Chickpea Cake)
Light Gujarati chickpea-flour cake steamed until springy, then topped with mustard seeds, curry leaves, and lemon for a portable savoury snack.

Ingredients
- •1 1/2 cups chickpea flour
- •1 cup water
- •2 tbsp fresh lemon juice
- •2 tsp granulated sugar
- •1/4 tsp ground turmeric
- •3/4 tsp salt
- •1 tsp baking soda
- •2 tbsp vegetable oil
- •1 tsp mustard seeds
- •8 curry leaves
- •1 tsp sesame seeds
- •2 tbsp fresh cilantro, chopped
Directions
- 1Whisk chickpea flour, water, lemon juice, sugar, turmeric, salt, and 1 tablespoon oil into a smooth batter.
- 2Bring 1 inch of water to a simmer in a wide pot fitted with a steaming rack.
- 3Stir baking soda into the batter, pour immediately into an oiled 8-inch pan, and set the pan on the rack.
- 4Cover and steam 12–15 minutes until the centre springs back when lightly pressed.
- 5Heat remaining oil, crackle mustard seeds, curry leaves, and sesame seeds for 30 seconds, then spoon over the dhokla.
- 6Cool slightly, scatter with cilantro, and cut into small squares for packing.
💡 Add the baking soda only after the steamer is ready; waiting after it foams costs the dhokla its light, airy texture.
