Ingredients

  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1 cup pecan halves
  • 1/4 teaspoon salt

Directions

  1. 1Combine sugar, corn syrup, and water in a saucepan; bring to a boil over medium heat, stirring until sugar dissolves, then stop stirring and cook until mixture reaches 260°F on a candy thermometer (about 15 minutes).
  2. 2While syrup cooks, beat egg whites with salt until stiff peaks form in a large mixing bowl.
  3. 3Slowly pour hot syrup into beaten egg whites while beating constantly on medium speed.
  4. 4Continue beating until mixture loses its glossy appearance and forms soft peaks, about 3-5 minutes, then stir in vanilla and pecans by hand.
  5. 5Drop spoonfuls of divinity onto waxed paper and let cool completely until set, about 30 minutes.
