Ingredients
- •2 cups granulated sugar
- •1/2 cup light corn syrup
- •1/2 cup water
- •2 egg whites
- •1 teaspoon vanilla extract
- •1 cup pecan halves
- •1/4 teaspoon salt
Directions
- 1Combine sugar, corn syrup, and water in a saucepan; bring to a boil over medium heat, stirring until sugar dissolves, then stop stirring and cook until mixture reaches 260°F on a candy thermometer (about 15 minutes).
- 2While syrup cooks, beat egg whites with salt until stiff peaks form in a large mixing bowl.
- 3Slowly pour hot syrup into beaten egg whites while beating constantly on medium speed.
- 4Continue beating until mixture loses its glossy appearance and forms soft peaks, about 3-5 minutes, then stir in vanilla and pecans by hand.
- 5Drop spoonfuls of divinity onto waxed paper and let cool completely until set, about 30 minutes.
