Drunken Noodles

Ingredients

  • 8 oz dried rice noodles
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2-3 red Thai chilies, sliced
  • 8 oz chicken or shrimp, sliced
  • 1 red bell pepper, sliced red bell pepper
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1/2 cup fresh basil leaves
  • 2 green onions, chopped

Directions

  1. 1Cook rice noodles according to package directions, drain and set aside.
  2. 2Heat oil in a wok or large skillet over high heat and stir-fry garlic and chilies for 30 seconds until fragrant.
  3. 3Add chicken or shrimp and cook until nearly done, about 2-3 minutes.
  4. 4Add bell pepper and stir-fry for 1 minute.
  5. 5Add cooked noodles to the wok with soy sauce, fish sauce, and brown sugar, tossing continuously for 2 minutes.
  6. 6Remove from heat and fold in fresh basil and green onions.
  7. 7Serve immediately on plates.
