Dubu Jorim (Korean Braised Tofu)
Pan-fried tofu slices braised in a soy and gochugaru sauce until they take up the colour and heat.

Ingredients
- •450 g extra firm tofu, sliced
- •3 tbsp soy sauce
- •1 tbsp gochugaru
- •2 green onions, sliced
- •2 garlic cloves, minced
- •1 tsp sesame oil
- •1 tbsp neutral oil
Directions
- 1Pat the tofu slices very dry and season them lightly with salt.
- 2Fry in the neutral oil for five minutes a side until a golden skin forms.
- 3Mix the soy sauce, gochugaru, garlic, sesame oil and a splash of water into a sauce.
- 4Pour it over the tofu in the pan.
- 5Braise ten minutes on low, spooning the sauce over, until it reduces and clings.
- 6Scatter the green onions over and serve with rice.
💡 Dry tofu and a proper skin first. Sauce poured over pale tofu soaks straight in and the slices break apart as they braise.
