Dubu Jorim (Korean Braised Tofu)

Pan-fried tofu slices braised in a soy and gochugaru sauce until they take up the colour and heat.

Ingredients

  • 450 g extra firm tofu, sliced
  • 3 tbsp soy sauce
  • 1 tbsp gochugaru
  • 2 green onions, sliced
  • 2 garlic cloves, minced
  • 1 tsp sesame oil
  • 1 tbsp neutral oil

Directions

  1. 1Pat the tofu slices very dry and season them lightly with salt.
  2. 2Fry in the neutral oil for five minutes a side until a golden skin forms.
  3. 3Mix the soy sauce, gochugaru, garlic, sesame oil and a splash of water into a sauce.
  4. 4Pour it over the tofu in the pan.
  5. 5Braise ten minutes on low, spooning the sauce over, until it reduces and clings.
  6. 6Scatter the green onions over and serve with rice.

💡 Dry tofu and a proper skin first. Sauce poured over pale tofu soaks straight in and the slices break apart as they braise.
