Dutch Baby Pancake

Ingredients

  • 1/2 cup all-purpose flour
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 4 tablespoons butter
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground cinnamon

Directions

  1. 1Preheat oven to 425°F (220°C) and place a 10-inch cast iron skillet inside to heat for 5 minutes.
  2. 2Blend flour, milk, eggs, salt, and vanilla extract until smooth batter forms.
  3. 3Carefully remove hot skillet, add butter and let it melt and coat the bottom and sides.
  4. 4Pour batter into the hot buttered skillet and return immediately to the oven.
  5. 5Bake for 15-20 minutes until the pancake puffs dramatically and edges turn golden brown.
  6. 6Remove from oven and sprinkle with cinnamon sugar mixture.
  7. 7Serve immediately while puffed, with your choice of toppings such as lemon juice, powdered sugar, fresh berries, or maple syrup.
