East Coast Lobster Rolls
Sweet Atlantic lobster tossed lightly in lemon-herb mayo and piled into buttery toasted rolls — the sandwich that defines a Maritime summer. Simple, generous, and completely delicious.

Ingredients
- •1 lb cooked lobster meat, chopped (fresh, frozen, or canned)
- •3 tbsp mayonnaise
- •1 tbsp lemon juice, fresh
- •0.5 tsp lemon zest
- •2 tbsp fresh chives, finely sliced
- •1 tsp fresh tarragon, chopped (optional)
- •1 celery stalk, finely diced
- •0.25 tsp salt
- •0.25 tsp white pepper
- •4 top-split hot dog buns
- •2 tbsp butter, softened
- •4 leaves leaf lettuce
Directions
- 1Pat lobster meat dry with paper towels and check for any shell fragments.
- 2Stir together mayonnaise, lemon juice, lemon zest, chives, tarragon, celery, salt, and white pepper in a bowl.
- 3Fold lobster gently into the dressing until just coated — do not overmix.
- 4Refrigerate filling while you toast the buns.
- 5Spread butter on the cut sides of the hot dog buns and toast in a skillet over medium heat for 1–2 minutes until golden.
- 6Tuck a lettuce leaf into each bun, then pile lobster filling generously on top.
- 7Serve immediately with kettle chips or a simple coleslaw.
💡 Frozen lobster meat from Atlantic Canada is sold at most Canadian grocery stores year-round and works beautifully; thaw overnight in the fridge and drain well. Top-split buns are the authentic style — look for them at Maritime-style bakeries or use regular buns split open.
