Egg Bhurji (Indian Spiced Scrambled Eggs)

Eggs scrambled into spiced onion and tomato until they set in soft curds, eaten with bread at any hour.

Ingredients

  • 6 eggs
  • 1 small onion, finely chopped
  • 2 tomatoes, chopped
  • 1 green chili, minced
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 2 tbsp cilantro, chopped
  • 1 tbsp neutral oil

Directions

  1. 1Heat the oil and add the cumin, waiting until the seeds darken and smell toasted.
  2. 2Add the onion and green chili and fry six minutes until softened and colouring at the edges.
  3. 3Add the tomatoes and turmeric with salt and cook six minutes until the mixture thickens and the oil separates.
  4. 4Beat the eggs lightly and pour them in.
  5. 5Stir slowly for three minutes, dragging the setting egg through the masala, until just set.
  6. 6Take off the heat, stir in the cilantro, and serve immediately.

💡 Stop while it still looks a shade too wet. Bhurji keeps cooking in the pan and dry bhurji cannot be brought back.
