Egg Bhurji (Indian Spiced Scrambled Eggs)
Eggs scrambled into spiced onion and tomato until they set in soft curds, eaten with bread at any hour.

Ingredients
- •6 eggs
- •1 small onion, finely chopped
- •2 tomatoes, chopped
- •1 green chili, minced
- •1/2 tsp turmeric
- •1/2 tsp cumin
- •2 tbsp cilantro, chopped
- •1 tbsp neutral oil
Directions
- 1Heat the oil and add the cumin, waiting until the seeds darken and smell toasted.
- 2Add the onion and green chili and fry six minutes until softened and colouring at the edges.
- 3Add the tomatoes and turmeric with salt and cook six minutes until the mixture thickens and the oil separates.
- 4Beat the eggs lightly and pour them in.
- 5Stir slowly for three minutes, dragging the setting egg through the masala, until just set.
- 6Take off the heat, stir in the cilantro, and serve immediately.
💡 Stop while it still looks a shade too wet. Bhurji keeps cooking in the pan and dry bhurji cannot be brought back.
