Egusi Soup
A rich and hearty West African soup made with ground melon seeds, leafy greens, and tender meat in a savory broth.

Ingredients
- •1 cup ground egusi (melon seeds)
- •1 lb beef or lamb, cubed
- •2 tablespoons palm oil
- •1 large onion, diced
- •3 cloves garlic, minced
- •2 cups spinach or bitter leaf, chopped
- •1 Maggi cube or bouillon cube
- •2 tablespoons tomato paste
- •4 cups beef or vegetable stock
- •2 Scotch bonnet peppers (optional)
- •to taste Salt and pepper
Directions
- 1Heat palm oil in a large pot over medium-high heat, then brown the meat cubes with diced onion and garlic for 5 minutes.
- 2Add tomato paste and stir well, cooking for 2 minutes to deepen the flavor.
- 3Pour in the beef stock and bring to a boil, then reduce heat and simmer for 15 minutes until the meat is tender.
- 4Mix the ground egusi with a cup of water to form a smooth paste, then stir it into the pot slowly to avoid lumps.
- 5Add the Maggi cube, chopped greens, and Scotch bonnet peppers if using, and stir well.
- 6Simmer for another 10-15 minutes until the soup thickens and the flavors meld together.
- 7Taste and adjust seasoning with salt and pepper as needed, then serve hot with fufu, rice, or pounded yam.
