Embutido (Filipino Meatloaf)

Filipino steamed pork meatloaf studded with vegetables, raisins, relish, sausage, and egg, then cooled and sliced for packed lunches.

Ingredients

  • 2 lb ground pork
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup carrot, finely diced
  • 1/2 cup red bell pepper, finely diced
  • 1/3 cup sweet pickle relish
  • 1/3 cup raisins
  • 1/2 cup onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1/2 tsp black pepper
  • 2 hard-boiled eggs, peeled and quartered lengthwise
  • 2 hot dogs, halved lengthwise

Directions

  1. 1Mix pork, breadcrumbs, beaten eggs, carrot, bell pepper, relish, raisins, onion, garlic, soy sauce, and pepper until evenly combined.
  2. 2Divide the pork mixture between two large foil sheets and press each portion into a flat rectangle.
  3. 3Arrange hard-boiled egg and hot-dog strips lengthwise down each rectangle, then roll the pork tightly around the fillings.
  4. 4Wrap each roll securely in foil, twisting the ends closed to keep water out.
  5. 5Steam the foil-wrapped rolls over simmering water for 50–55 minutes until the centres reach 160°F (71°C).
  6. 6Cool the embutido at least 20 minutes before unwrapping and slicing into firm rounds.

💡 Cooling is what makes embutido slice cleanly; cutting it piping hot causes the egg-and-sausage centre to pull away from the pork.
