Embutido (Filipino Meatloaf)
Filipino steamed pork meatloaf studded with vegetables, raisins, relish, sausage, and egg, then cooled and sliced for packed lunches.

Ingredients
- •2 lb ground pork
- •1 cup breadcrumbs
- •2 eggs, beaten
- •1/2 cup carrot, finely diced
- •1/2 cup red bell pepper, finely diced
- •1/3 cup sweet pickle relish
- •1/3 cup raisins
- •1/2 cup onion, finely diced
- •3 cloves garlic, minced
- •2 tbsp soy sauce
- •1/2 tsp black pepper
- •2 hard-boiled eggs, peeled and quartered lengthwise
- •2 hot dogs, halved lengthwise
Directions
- 1Mix pork, breadcrumbs, beaten eggs, carrot, bell pepper, relish, raisins, onion, garlic, soy sauce, and pepper until evenly combined.
- 2Divide the pork mixture between two large foil sheets and press each portion into a flat rectangle.
- 3Arrange hard-boiled egg and hot-dog strips lengthwise down each rectangle, then roll the pork tightly around the fillings.
- 4Wrap each roll securely in foil, twisting the ends closed to keep water out.
- 5Steam the foil-wrapped rolls over simmering water for 50–55 minutes until the centres reach 160°F (71°C).
- 6Cool the embutido at least 20 minutes before unwrapping and slicing into firm rounds.
💡 Cooling is what makes embutido slice cleanly; cutting it piping hot causes the egg-and-sausage centre to pull away from the pork.
