Ensalada de Nopales
Mexican cactus salad with tomato, onion, cilantro, lime, and queso fresco, served chilled or at room temperature.

Ingredients
- •1 lb nopales, cleaned and diced
- •2 medium tomatoes, diced
- •1/3 cup white onion, finely chopped
- •1/4 cup fresh cilantro, chopped
- •2 tbsp fresh lime juice
- •1 tbsp olive oil
- •1/3 cup queso fresco, crumbled
- •1/2 tsp dried oregano
- •3/4 tsp salt
Directions
- 1Bring a saucepan of salted water to a boil, add nopales, and simmer 8–10 minutes until tender but still firm.
- 2Drain the nopales and rinse briefly under cool water, then spread them on a towel to remove excess surface moisture.
- 3Combine nopales, tomatoes, onion, cilantro, lime juice, olive oil, oregano, and salt in a bowl.
- 4Fold in queso fresco and let the salad rest 10 minutes before serving so the flavors settle.
💡 Dry the cooked nopales well after rinsing; excess mucilage and water thin the dressing and make the salad slippery.
