Mexican cactus salad with tomato, onion, cilantro, lime, and queso fresco, served chilled or at room temperature.

Ingredients

  • 1 lb nopales, cleaned and diced
  • 2 medium tomatoes, diced
  • 1/3 cup white onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1/3 cup queso fresco, crumbled
  • 1/2 tsp dried oregano
  • 3/4 tsp salt

Directions

  1. 1Bring a saucepan of salted water to a boil, add nopales, and simmer 8–10 minutes until tender but still firm.
  2. 2Drain the nopales and rinse briefly under cool water, then spread them on a towel to remove excess surface moisture.
  3. 3Combine nopales, tomatoes, onion, cilantro, lime juice, olive oil, oregano, and salt in a bowl.
  4. 4Fold in queso fresco and let the salad rest 10 minutes before serving so the flavors settle.

💡 Dry the cooked nopales well after rinsing; excess mucilage and water thin the dressing and make the salad slippery.
