Escondidinho de Carne (Brazilian Beef and Cassava Bake)

Ingredients
- •2 lb cassava (yuca), peeled and cut into chunks
- •3 cups cooked shredded beef
- •1 medium yellow onion, finely diced
- •3 cloves garlic, minced
- •1 medium tomato, diced
- •2 tbsp olive oil
- •3/4 cup whole milk
- •3 tbsp unsalted butter
- •1 1/2 cups mozzarella cheese, shredded
- •1 tsp salt
- •1/2 tsp black pepper
- •1/4 cup fresh parsley, chopped
Directions
- 1Boil cassava in salted water for 25–30 minutes until very tender, removing any tough fibrous cores.
- 2Meanwhile, cook onion and garlic in olive oil, then add tomato and shredded beef and heat until the mixture is fairly dry.
- 3Drain the cassava and mash it with milk, butter, salt, and black pepper until smooth.
- 4Spread the beef mixture in a greased baking dish and cover it evenly with the cassava mash.
- 5Top with mozzarella and bake at 400°F (200°C) for 20 minutes until bubbling and golden.
- 6Rest 5 minutes, scatter with parsley, and cut into portions for serving or meal prep.
