Ingredients

  • 2 lb cassava (yuca), peeled and cut into chunks
  • 3 cups cooked shredded beef
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 medium tomato, diced
  • 2 tbsp olive oil
  • 3/4 cup whole milk
  • 3 tbsp unsalted butter
  • 1 1/2 cups mozzarella cheese, shredded
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped

Directions

  1. 1Boil cassava in salted water for 25–30 minutes until very tender, removing any tough fibrous cores.
  2. 2Meanwhile, cook onion and garlic in olive oil, then add tomato and shredded beef and heat until the mixture is fairly dry.
  3. 3Drain the cassava and mash it with milk, butter, salt, and black pepper until smooth.
  4. 4Spread the beef mixture in a greased baking dish and cover it evenly with the cassava mash.
  5. 5Top with mozzarella and bake at 400°F (200°C) for 20 minutes until bubbling and golden.
  6. 6Rest 5 minutes, scatter with parsley, and cut into portions for serving or meal prep.

💡 Keep the beef filling relatively dry so the cassava layer stays distinct instead of absorbing liquid and becoming loose.
