Brazilian-style closed meat pastries with a soft yeast dough and a bright beef, tomato, onion, parsley, and lime filling.

Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 1/4 tsp instant yeast
  • 1 tbsp granulated sugar
  • 1 1/2 tsp salt
  • 1 1/4 cups warm water
  • 3 tbsp olive oil
  • 1 lb ground beef
  • 1 medium tomato, seeded and finely diced
  • 1/2 medium yellow onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp fresh lime juice
  • 1/2 tsp ground allspice
  • 1/2 tsp black pepper

Directions

  1. 1Mix flour, yeast, sugar, and half the salt, then knead with warm water and olive oil until smooth.
  2. 2Cover the dough and let it rise 50 minutes until puffed.
  3. 3Mix beef, tomato, onion, parsley, lime juice, allspice, pepper, and remaining salt, then drain any pooled liquid.
  4. 4Divide dough into twelve rounds and place a small mound of beef filling in each centre.
  5. 5Pinch three edges together firmly to form closed triangular pastries and place seam-side up on a lined sheet.
  6. 6Bake at 400°F (200°C) for 18–20 minutes until golden and the beef is cooked through.

💡 Drain the seasoned beef filling before shaping; tomato and lime release enough liquid to weaken the seams if left pooled.
